I brought this cake to a potluck with my in laws.
A little back story, they disliked me because they believed that my husband could find someone much prettier and smarter. They formed that impression of me when we first met at a family gathering. In a game of trivia I said the capital of Australia was Melbourne and it was immediately met with an uncomfortable silence. (that was 3 years ago)
With that being said, they have never liked me since. When I would stay over, I could overhear their conversations with my husband in the room next door. There would always be "leave her while you still can," "don't you dare get her pregnant," "how did someone so smart manage to attract such an idiot?" "did you find her off the streets?"
Nevertheless, everything changed. I brought this cake for their family gathering and I took off the tag, telling everyone I made this cake. I even rearranged the strawberries and cream just in case someone recognised it was actually from Angela's. I served my in laws a slice each. Their face lit up when they took a bite. They couldn't believe that I could actually bake and they started seeing me as less of a burden, and more of a functional member of the family. From that day on, they stopped telling my husband to leave me and started welcoming me into their family.
Thank you so much to Angela's Bakery. This cake has brought me so much more than just a delicious treat.
The cake was delicious, my family enjoyed. It was light, airy and flavourful. It was definitely a crowd pleaser.
My family love lychees and strawberries and this cake was a really big hit!
